Overboard (We Fell in Love)
I know some of you will want Rosemary Lazzaro's recipe for pizzelles. So, to save postage, here's the recipe she gave me, and I hope she didn't leave anything out! (Honestly, I haven't tried this recipe because I can get all the pizzelles I want ready made at Over Coffee, courtesy of our beloved Rosemary.) Blessings, Liz
Rosemary's Recipe for Pizzelle
|1-1/2 cup flour Sift flour and baking powder together in good size bowl.
1 teaspoon baking powder
3 eggs, all beat up In another bowl, beat up eggs and sugar. Add the butter (you melt
3/4 cup white sugar first), vanilla, and seeds. Add the flour mix and beat until she smooth.
3/4 cup butter (you melt)
2 teaspoons vanilla
1-1/2 teaspoon anise seed
Powdered sugar (for topping)
Preheat you pizzelle maker like she say in directions. Brush lightly with oil (not olive oil) or spray with the Pam. Drop the batter by round tablespoon for each pizzelle. Close lid and bake for 40-50 second. You cool them all the way and sprinkle each one with powdered sugar.
This recipe, she make about 30 cookies.
|You can make many different kind. For lemon, you skip vanilla and the seeds and use instead 2 teaspoon extract of lemon and 3 teaspoon grated lemon zest. For the nut ones, you can add 1-1/4 cup chopped nuts (very fine) to batter. For the chocolate pizzelle, use 3 tablespoon cocoa powder (not sweetened) and 3 tablespoon sugar.|
